Japanese carving knives and gouges Yoshiharu Y-7

Seven-piece set of Japanese Yoshiharu carving knives and gouges with long handles. Thanks to the longer handle, you can hold them like a pencil, which allows for precise carving. They are typical Japanese chisels made in the small Yoshiharu manufactory, where production still takes place in a traditional way - a large part of production is still done by hand.

The blades are made of double layer carbon steel. The bottom layer (cutting edge) is carbon steel, which is very hard and extremely sharp. However, such steel is relatively fragile, so it is protected by an upper layer of softer and more durable steel. The result are tools that are very sharp, easy to sharpen and durable at the same time.

The total length of each tool is 20.96 cm, of which the blade is 3.18 cm and the handle is 17.78 cm. The magnolia wood handles are round in shape and feels well in hand. Magnolia wood is commonly used on traditional Japanese knives, as it is very pleasant to the touch. All tools are made in Japan.

Maintenance: all carbon steel blades are prone to corrosion if not properly cared for. However, maintenance is simple - just wipe the blades dry after use and occasionally rub them with oil. The manufacturer recommends using camellia oil, a traditional Japanese choice for blade protection, but any vegetable oil will work.
