Japanese knives

Japanese kitchen knives differ significantly from common European types of knives in terms of shape, but also in construction. The most common type of Japanese kitchen knife is santoku, which is similar to European kitchen knives. However, in addition to santoku, we have already started to explore other types, such as nakiri, gyuto, deba, yanagiba and other special japanese kitchen knives. Japanese knives have excellent cutting properties, extreme sharpness and hardness of the blade, but at the same time they are relatively fragile and require very careful handling.
